Renovate Your Soul Shack in 2024: A Splash of Colorful Eats for a Healthier YOU!




Eating a RAINBOW...Doesn’t that just sound magical?!!! I thought so when I first heard it. As I looked out on the yard on the first day of 2024, I was looking to feel inspired to get my house in order. I sipped my morning bullet coffee and said a thank you prayer that morning. You know those wee hours of the morning when no one is up yet and all is calm? My mind wakes up and gratitude takes over for all the blessings our family has. This particular morning, just after my morning meditation, I realized that this year, albeit new, is indeed off to a great start. I have all those things that I’ve been praying about today: my husband and I have a peaceful, joy-filled home, happy healthy kids, a beautiful community of friends, a job I adore, and enough money to meet my needs.


Blessings abounding, I am always looking to be my best self. If you’re like me, I am in a constant state of trying to improve those areas that need a little light shed on them or in this case, a RAINBOW! So this year I plan to be intentional about the foods I eat. Getting my house in order, literally, the thing that houses my soul, meant choosing a diet plan that I knew I could stick to. Like most renovations, this one was going to take a while, but little by little, you unveil a new space that is much improved. I chose to try to pack as many colorful, nutrient-dense foods into my day as possible. Some call it the "Rainbow diet, or Eating the Rainbow." That sounded fun to me! As if at any moment, unicorns would prance through the halls of my home. Ha! Not like a chore or work, but rather an adventure. If you’re tired of this fad diet or that one that says you can only eat one type of whatever, then maybe join me on this vibrant food fantasy! Before you know it, we’ll both be beaming from the inside out!


Today's breakfast was like a symphony of flavors:


Vibrant Sunrise Sweet Potato Hash

* Serves: 2-4, Gluten Free

* 2 tsp. extra virgin olive oil, divided

* 1 large sweet potato, peeled and diced

* 1 small sweet onion

* 2 slices of shoulder bacon or ham

* 2 cups of kale, stems removed and chopped

* 1 small tomato, diced

* 1 jalapeño, sliced 

* 1 avocado, diced

* 2-4 whole large eggs, over easy is my preference 

* Cilantro and lime to garnish


First, heat your fry pan over medium heat and add 1 tsp olive oil. Then add the next three ingredients. Sauté for about 8 minutes total, stirring occasionally. I added the lid to my pan between stirs to allow the potatoes to cook through. After everything is cooked through, toss in the kale to steam for the last two minutes. Give it a good stir and season with salt and pepper.


For the eggs: In a separate smaller fry pan, add the other tsp. of olive oil over medium heat, then cook your eggs to the desired doneness. I like mine dripping that sunshiny yellow all through my bowl!


For the toppings: Garnish with diced tomatoes, jalapeño slices, avocado slices, chopped cilantro, and a squeeze of lime.


Y’all—this was like a rainbow in my bowl and a welcome addition to a dreary January morning. It warmed me from the inside, and I enjoyed every morsel! It had all the colors, lots of protein, veggies, and good fats—all the things. I hope you try it and enjoy it as much as I did. My day is already off to a richly palatable start! 🌈🌈🌈
